Quality & Laboratory
Our goal is to bring the highest quality products to every table in the world, meeting the most demanding standards. To achieve this, we continually invest in cutting-edge equipment and technology. We have a team of highly qualified professionals and workers who work together daily to achieve this goal.
That’s why our industrial plants have implemented a quality management system that is HACCP (Hazard Analysis and Critical Control Points) certified. This standard is a systematic preventive process to guarantee food safety.
Our mission is to work toward continuous improvement, and that’s why we’re working toward Global Gap certification for our own farms.
Our laboratories have a technical team of four managers and 13 analysts, equally distributed throughout all stages of the process.

Quality control of our oils:
The excellence and quality of our oils are proven in our raw materials. Not only through chemical analysis, where acidity is usually the most common parameter for categorization, but also through organoleptic analysis, that is, tasting the oil to determine whether it has any defects.
The laboratory controls inputs, work-in-process products, and finished products. This department plays a fundamental role in obtaining the highest quality final products, complying with current regulations and our customers’ specifications.
Our finest and most renowned oil, Premium Extra Virgin Olive Oil, is identified as one of the best not only by chemical analysis, but also by its lack of defects and its distinctive, ripe, sweet flavor, which has earned it numerous mentions over the years.
Presentation, container design, complementary elements, and packaging also take on great importance in our product. This is why we are continually making improvements and designing both the bottle format and other complementary elements, ideal for savoring the finest extra virgin olive oil.

Olive Production Control Laboratory:
In this laboratory, raw materials are controlled from their arrival to the end of the fermentation stage. Its objective is to monitor fermentation and then release the raw materials for subsequent processes. To this end, we employ a digital system for tracking and traceability.
Table Olive Process Control Laboratory:
This department controls work-in-process, inputs, and finished products. This laboratory plays a fundamental role in obtaining high-quality finished products that comply with current regulations and customer specifications.
